Fall is just a couple weeks away and as the weather (slowly) begins to cool down, I love making soups! Recently I made this simple, delicious, healthy butternut squash soup.

2 tablespoons olive oil
2 carrots diced
2 celery stalks diced
1 onion diced
4 cups cubed butternut squash
1/2 teaspoon chopped thyme
4 cups chicken broth
salt & pepper to taste

How to:
1.) Cook veggies in oil 3 to 4 minutes.
2.) Stir in butternut squash, thyme, chicken broth, salt, and pepper.
3.) Simmer until squash is tender. (About 30 minutes.)
4.) Blend to puree soup.
5.) Enjoy!

What are your favorite fall soups?
